Ingredients:
Base:

- 2 tbsp tahini

- 50 ml Souriani Lebanese olive oil

- 1 tsp paprika
- 50 ml Souriani olive oil
Instructions:
1. Prepare the Pita Bread:
- Preheat the oven to 180°C (350°F).
- Spread the torn pita pieces on a baking sheet and drizzle with a little Souriani olive oil.
- Bake for 10-15 minutes, or until the pita pieces are crispy and golden brown.
2. Make the Yoghourt Sauce:
- In a bowl, mix the yoghurt, tahini, minced garlic, lemon juice, 50 ml Souriani olive oil, salt, and pepper. Adjust the seasoning to taste.
3. Assemble the Fatteh:

- Sprinkle the toasted pine nuts, chopped parsley, ground cumin, and paprika over the yogurt sauce.
- Drizzle with a bit more Souriani olive oil for extra flavour.
